Water is unique in nature is can't be classified as organic - because is does not contain carbon, yet it is necessary for life. It also has some very unusual physical properties.
It is the basis for reference for a lot of things we measure from like density, bp, mp, references of 0, and 100 - very unique.

In chemistry, it is used as a solvent for water-soluble compounds.
In biology, it allows physiological functions to proceed in living tissue.
Since it is a good solvent it is also useful to clean dirt and other water-soluble impurities from surfaces (such as hair, skin, roads, etc.)
When frozen, it aids in cooling thinks such as drinks and organics (such as meat or fish).
