Up until the early 19th century they used actual live cats to walk on. This didn't work out very well as the cats wouldn't stay still. After a few failed experiments with other vertebrates a consensus was reached between the five most famous designers to use wooden boards.
The name "catwalk", however, remained unchanged.

the model run-way called catwalk cos that's how they walk, slinky, elegant, smoothly and precisely, like a cat?
Catwalks also exist on ships, warehouses, theatres - normally an elevated platform high up where cats are said to be able to walk.

because they were originally located in a "cathouse" and the young maidens were paraded out in front of the anxious male customers who wanted to devour them. This is also why men are referred to as "dogs" by these same babes.
