My reccomendation is do something current.
1) greenhouse effect
2) the effect of clhorflourocarbons
3) life on other planets
4) life in the ocean
5) genetic mutation
Sorry it's only 5, but these are all pretty common and interesting issues!

Build a robot.
Create a virtual computer.
Breed your own strain of flower.
Demenstrate Mendelian Genetics using bean plants.
Build a wind tunnel to demonstrate priciples of aerodynamics.
Disprove a commonly held and "univerally" accepted scientific theory, like the myth about taste "zones." (You taste everything equally across the tongue, and parts of the mouth, but since all the texts operate on the "zone theory..."
etc...

I still like the brew your own alcohol experiment and then set up a distillery and who how distillation works. Alcohol is laughably easy to brew, at home.
If your parents object, set up a structure with colored cels that show how light colors mix to show other colors.
