I was thinking that each demension means a force of the universe ex. gulon, graviton, electron and so on...

The dimensions aren't the particles, the vibration modes within these extra dimensions bring about the characteristics of these various particles. When there are more physical dimensions (remember 1 dimension for time) for these strings to vibrate within, there are more possible vibration modes and therefore more possibilities of different particles with different properties. The resulting characteristics of these vibration modes within these extra dimensions brings about various forces, charges, masses, etc. This is, of course, a matter of mathematical elegance moreso than anything real at this point.

Good question. I think of it like this: Newton described the Universe in terms of a 3 dimensional space. Hamilton and others who followed Newton, were able to generalize Newton's laws using 3x3 matrices. The dimensions of the matrices were easily correlated with the directions of the axes in 3 dimensional space. Einstein, used a 4x4 matrix to describe interactions in his General Theory of Relativity. But what was did the extra collumn and row in his 4x4 matrix represent? Well, the first 3 rows and collumns represented "dimensions", so why not say the new row and collumn represent a dimension as well? And why not say that Einstein's space was 4 dimensional, since the matrices that described interactions were 4 dimensiona?

String theories are "simply" attempts to describe interactions with matrices with even more dimensions. Connecting the dimensions of the matrices with dimensions in space is just a remnant from Hamilton and Newton's mechanics which can be described using a matrix with the same number of dimensions as we observe space to have.

You have to be careful to remember that things like String Theories are creations of human minds. And you have to know where they came from in order to correctly ask and answer questions like the one you pose here.
