Does this mean that I've been in college for almost four years (Fall 04-January 2007 (currently attending college)? I ask this because me and my friend are arguing over this question...she says is only been two years: Fall 2004 to Fall 2005 = 1 year and Fall 2006 to 2007 = 2nd year. Who's right?

Fall to Spring is a school year.
So you were there Fall 04 to Spring 05. 1 year
Fall 05 to Spring 06. 1 year.
Fall 06 to Winter Break 06. 1/2 year.
2.5 years in school. Your friend needs to get punched in the face a few times. If you consider 2.5 years almost 4 years, then YES, almost four years.

You are in college and haven't learned how to use a calendar yet?
You have been in college for 2.5 years. If you are on schedule (and based on your question, I'm kind of doubting this) you should graduate in May 2008.
