"Heartbreaker" by Led Zeppeling. Jimmy Page displays some crazy speed.
"While My Guitar Gently Weeps" by the Beatles (written by George who also wrote "Something") with Clapton playing the solo. That unique "wobbly" sound was produced by playing Clapton's solo back through an Automatic Double Tracker.
"November Rain" by Guns N' Roses is also really good.

Love the guitar solo in While My Guitar Gently Weeps - The Beatles, but I'm pretty sure it's Clapton on guitar in that song.
Eruption by Eddie Van Halen was pretty groundbreaking as well.

How about the Solo to Hear n' Aid's "We're Stars"
Or anything from Yngwie Malmsteen (One of the BEST axe slingers)
And Eddie Van Halen? Or George Lynch of Dokken?
Last one, (You'll have to dig this one up) Alvin Lee of 10 years After? (He was considered the "Fastest guitarist in the East" and I think once jammed with Jimi Hendrix.)

Mine is probably obscure, but if you can find it listen to Kid Charlemagne by Steely Dan on The Royal Scam album. Larry Carlton plays an amazing solo Check it out if you can.
