classes would you take and what would you major in?

i would think marine biology would be a good start.

Take all the biology, zoology, anatomy, animal behavior, and math you can get. Send letters to places like Sea World and ask them for advice. Someone WILL answer you. And swim, swim, swim.
I had a student a few years an interest in this field. Everyone around here thought "yeah, right" because we live in the middle of Illinois. But she's working in California and training dolphins now -- she dreamed it and she made it happen.

Psychology programs often include classes on training techniques. Look for things like Applied Behavior Analysis, Operant Training Techniques, or anything with animal behavior components.
