The celebs currently hang out at Tao (Venetian) and Jet (Mirage).
I don't know of any ALL seafood buffet, but Rio and Paris both have great seafood selections on their buffets. (avoid Mandalay Bay's, I've heard it's awful).
There are a million different activities/attractions, of course it depends on your taste.... definitely spend some time at the Bellagio (impressive free water show in lake out front, exquisite free atrium garden inside, and their art gallery currently has an Ansel Adams exhibit, costs something like 12 bucks.)
For shopping, check out the Forum Shops at Caesar's (more for window shopping, unless you're rich), the Desert Passage at the Aladdin, and my favorite... the mall at the Venetian, where you can ride a gondola through a canal running through the mall (one of those 'only in Vegas' type of things).
For shows, Splurge on a Cirque show. O at the Bellagio is the most impressive, although pricey. Love at the Mirage is the newest and set to Beatles music, and Mystere at the Treasure Island is the best Cirque buy for your dollar. Other great shows include Le Reve at the Wynn and Penn & Teller at the Rio.
Spend an evening at downtown Fremont Street for free entertainment, low casino table limits, and the cheapest souvenirs in town.
Exit the Strip and check out the Hard Rock Hotel's collection of rock memorabilia, have dinner at the infamous Pink Taco Mexican restauarant, check out their lingerie shop (pricey) and their gift shop (again pricey).
Wear comfortable shoes, have fun, play safe, and remember the only way to guarantee you'll win at gambling is to own the casino.

if you really want to see celebrities i would recommend eating at the 9 Steakhouse at the Palms on a Friday or Saturday night. The celebs love it bc it is one of the top 100 restaurants in the world. Also at the Palms I would suggest the Playboy Club on a friday or saturday night. These are guaranteed spots with reasonable prices and impeccable service. All the other places hire celebs to be there and you can't even see them. At the Palms they are always walking around. As for the entry, call the club and ask for a hosts number, they can usually put you on the list and you will either not wait in line or get in for free. As for drinks, if you are a group of girls talk to the host about some specials

I've gotten pics with Paris Hilton twice at Pure and a pic with Janice Dickinson at Tao. I think Tuesdays at Pure and Thursday at Tao are good for celeb sightings. Mondays - Jet, Sunday - Body English. Fri/Sat are usually tourist nights, but sometimes you still see celebs. Oh and I've met Lil Jon and Staind at the Palms, Fat Joe at Hard Rock.

The Palms is the new hang out for the celebs in general. At night, check out the hot clubs of the week... Pure, Tao and Moon.

most celebs i think go to the Palms and a seafood buffet would be located at the Rio hotel i forgot the name but yeah they have one

I would definitely go to Pure. I usually see Paris Hilton, Random Football Players etc. Sometimes Lindsay is there too.
Also, try out the club at the Hard Rock!

Cool, I am going to Vegas soon too. Well, I believe The Palms is a popular place. It has the Playboy club in there so if celebrities are going to go anywhere, then it will probably be there.

well, I had drinks with tommy lee at the palms.
Pure is a good place to go
Rain is great too.
you will have a blast. Try the champange buffet at the bilagio or ceasers.
