so and so knew so and so was the one. At first so and so was a holdout. what does that mean?

A good example is on a jury - if everyone was voting one way, and they kept arguing and arguing to convince the last person to change their vote, they would probably call that person a "hold out." They are holding on, perhaps stubbornly, to their opinion or vote, despite pressure to change.
