In cats "self" means a solid colour, without any other markings. So a "red self" cat would be a red/ginger coloured cat without any other colours or stripes etc.

I'm not sure if the term "self" is used to describe the colours of other animals, but if it is, then a "red self" animal would be one with solid red coloured fur and no other markings.
