How can you explain the fact that we see a great range of colors even though only three cone types exist?

Think about it this way. A light that we see as purple will be stimulating both the red and the blue cones. As the light becomes more red and less purple, it stimulates the red ones more and the blue ones less so we see it as more red. I think that works to explain the complete range of color vision.
