A tip for a quick knitted baby blanket: get some bulky yarn that is soft enough for a baby, and use larger needles (say perhaps size 15 or 17) and do garter stitch until you have the width you want, then simply knit to the length you want and there you go! I have done 2 blankets like this when I first learned to knit, and they were SUPER FAST to make.
GARTER STITCH = knit EVERY row (supadupa easy!)

Actually, the Grandma's Favorite Dishcloth pattern makes a nice baby afghan done in a bulky weight yarn on size 10 1/2 or 11 needles. Cast on 3 stitches, knit 3 rows, then:
Knit 3, yarn over (yo) knit to the end every row until the sides are the width you want the afghan to be.
Then decrease by this means:
knit 3, yo, knit 2 tog, knit to the last 6 st, knit 2 together, knit to the end every row until there are 5 stitches left, knit 1, knit 3 together, knit 1, and knit 3 rows even, bind off.
I've done this with Encore Bulky and used 5 balls of it, 2 1/2 balls to the center, and 2 1/2 balls to the end.
