I just bought a 2005 Nissan Murano used
The interior is in great condition except for the driverside armrest
the plastic is peeling..
What can I do to stop the peeling?

If its an 05 its still under warranty - take it to the dealer and have it replaced. If not, best bet is buying a new one at a junk yard where you can find one cheap.

Check with a dealer (car) The arm rest might be covered by the extended warranty! Or, you might find one at an auto scrap yard. Or you might have to buy a new one, at the dealer's place!
