MacKerricker (I might have misspelled that) State beach near Ft Bragg has beautiful sunsets and the nearby town is quaint.
Moonstone Beach near Arcata is just breathtaking and the drive there is worth it.
Sugarloaf Ridge State Park near Santa Rosa is out of the way and in a beautiful valley.
Yosemite has so much to offer.
Flint Ridge near Oregon is isolated with a great view of the ocean.
Pt Reyes National Seashore is by far the best place to go. If you can hike into Coast Camp, you will be rewarded with the best sunset.

Ok, I'm really biased because we were shipped off there every summer for camp but I love Felton CA. That's in the Santa CRuz Mountains. All of the Redwoods and the fresh water creeks running through. Plus the smell of the Redwoods early in the morning are a great way to wakeup. Besides the Summer Camp we went to, I know there are plenty of campgrounds in the area, so check 'em out.

In my opinion, the best way to do this is to drive the Pacific Coast Hwy from San Diego (road actually starts just north of SD) all the way into WA. This will be slower going than taking I5. With a week and a few days you don't have time to do this justice. So, you need decide where you want to spend your time. Oregon or ...? If Oregon, I'd suggest you high tail it to San Francisco then take the PCH north, which becomes 101 after awhile. If you want to go skiing, the place to go is Lake Tahoe. This will be a bit of a side step, but Lake Tahoe is one of the most amazing places to go. Suggest Heavenly Valley ski area, bring lots of $, nobody said Heaven was cheap. This alone could take 3 days of your journey. 1 day to get there, 1 day to ski, 1 day to get back to your route. Course you might decide to stay:) There is soooo much to see, Death Valley, Sierra Nevada, San Diego, greater LA, the coast from LA to SF is amazing. SF itself is good for 2-3 days of whirlwind sightseeing, Napa Valley, Sausalito... The coast north of SF is equally amazing.........hard to limit. Or, you could just go to San Diego and hang out in the Gaslight Quarter, bar hopping.....

Further north is Dillion Beach.. Even further.. in Mendocino is Manchester Beach.. Dillion beach is West of Petaluma off of Hwy 1.
