What music would best for teaching in addition to dancing swing and rumba? Any suggestions on artists etc would be helpful.

What type of swing? What type of Rumba?

Here is a couplse of pretty universal swing songs (won't work for West Coast Swing - it's too fast):

Easiest beginner dance for the Rhumba would be "Spanish eyes" by Engelbert Humperdink
There is a lot of Rhumba music:
Goodby Argentina (Madonna)
Lady in Red (Chris De Burg)

East cost
Take me to the river

West cost
Mustang Sally
Until the midnight hour Both have a good beat
