"Top o' the morning to you" is a traditional Irish greeting, the equivalent of "Good morning" but more exuberant. And the traditional response is "...and the rest of the day to you."

It's only a Scottish -and also Irish- form of saying "hello and a very good morning to you". Gracious, don't be so nervous! :-). Why not wish him the same?
