Lobster is bigger and associated with saltwater.Crayfish is smaller and a freshwater species.

Crayfish is good stuff man and we are going to go get some this week end. Crayfish are a sweet fishy flavor as you know and great with drawn garlic lemon butter. However they are messy and kind of hard to get out of the shell. Lobster is good stuff too. They do taste the same however lobster has a stiffer fishy flavor and the meat is more tougher the crayfish. Lobster meat will bounce on your plate as will a crayfish but the lobster will bounce more and you can run a knife down the center of the shell and pull the meat out with your hands. The meat is as big as a banana. I love both of them and they are both high in fats and really not that healthy for you. There are both bottom feeders where lobster will eat more fish where the crayfish will eat live fish and only fresh fish meat that you would use for bait, but mostly plant life and algae. The bait used for crayfish must be good enough for you to eat or they will not touch it. Where lobster bait is better a little or lot smelly. Crayfish have many types for example in the US California the crayfish will grow to about 2 inch in tail length and maybe the whole thing will weights 4 ounces. However in Australia there crayfish can be up to 5 inches in tail length and the whole thing can weights up to 2 pounds. Lobsters can get up to 30 pounds but mostly 2.5 to 5 pounds and they can live for like 30 years where a crayfish will only live for a year or two sometimes more. Crayfish can be caught in any lake or stream in the world and can be caught by kids or adults in traps or a fishing pole. Where lobsters can only be caught in several oceans. Mostly in the Atlantic only in traps. Crayfish can be farm raised with other fishes as double cropping thus making them very cheap to raise. Where as lobsters are very expensive to raise and many have tried but have not made profits in this venture. A company in NC USA will be trying lobsters and salmon. So far I have not heard of any profits thus far as they have only been operating for two years. Lobster would be a great holiday or celebratory food but crayfish is for at least once a month food. Both lobster and crayfish should be cooked live but crayfish farmers have found the blast freezing them is an acceptable practice but found that half cooking is better before freezing them. Where as lobster can not be frozen without half cooking first. Other then the flavor they look and act the same and they all turn red when cooked and they can be cook in the same recipes.
