Sorry, I don't speak Italian, but basically it means that they've finally hit the point where they are making money.
Like "We've hit the jackpot!" indicates that they've gained a lot of money, paydirt doesn't mean a lot of money, but rather, you're finally getting paid at all.
Like many struggling actors do a lot of work for free before getting their first paid gig. The gig may not pay much, but at least they've hit paydirt.

It usually means that you have found a good way to make a lot of money. Probably originates from striking oil, or finding a rich seam of gold, or diamonds. Sorry, but my italian is very limited
