I have an annoying problem with Excel. In fact, when I edit a document, the text in the upper window is automatically shows and that comes over the text in the cell and as a result I can't see the whole text. I understand that I can remove the upper window where text automatically appears, but I am unable to find the function.

The Upper Window where you can see the content of the cell is called Formula Baar. To remove formula baar, click on View menu and then click on Formula Baar Menu item. It will remove your problem.

It is not the Formula bar, it is something else
clear the box in
Tools > Options > Edit > Edit directly in cell
