It depends on what strain of bacteria you are talking about. There are strains of bacteria that are resident in the human stomach with ph of 2 and the protease for these would be very acidic. Other strains may exist in salt water. Still others exist in the arctic under ice and still others exist in thermopiles up to 90-100 degrees celsius such as yellowstone (there is a very famous polymerase enzyme that is used in PCR and DNA profiling). So if you are doing experiments and need a protease it is best to check with the manufacturer of the product and it would be based on the application of the protease and what type of environment it would be used for.

Also most bacteria have multiple proteases that are active at different parts of teh bacteria (so i'd imagine the pH is different). You need to know the exact protein name and the strain; if companies sell it then you can find it there, otherwise maybe the literature would have the info.
