I've seen people ask "What's the best way to pay a model for a shoot" and many people answer "Cash".

I would like to do the same but also claim the models cost as a business expense. If I pay them cash, how can I prove that I paid them? I would like to ask some models who pose for photographers how they get paid and if the models give the photographer anything, or what?

I don't want to get in trouble with the IRS when they ask to prove I paid them. Thanks a million for your response! :-)

Document what you pay the model, then give that information to an accountant or tax preparer.
