In fact, I am looking for a kind of Almanach, encyclopedia, that would give me a more or less complete listing of all nationalities as I have to input it into our new computerized software at work.

Oh PLEASE! Do you expect someone to list every nationality? A nationality is simply the country each person lives in. Every country has a "nationality" associated with it:
Ethiopia - nationality is Ethiopian
Mongolia - nationality is Mongolian
Namibia - nationality is Namibian
France - nationality is French
Chile - nationality is Chilean
Jamaica - nationality is Jamaican
Haiti - Haitian
Georgia - Georgian
Greece - Greek
Netherlands - Dutch
Kenya - Kenyan
Eritrea - Eritrean
Sri Lanka - Sri Lankan
Fiji - Fijian
Etc.
