I have no prior experience except for serving cold cans of beer to golfers at a turn house. I need another characteristic that will make me impossible to refuse while getting hired.

Your presentation is most important. You must be clean, hair & nails short and spotless. Beware BO. You should dress to suit the position - not over the top - again spottlessly clean and well ironed.
Your personality & communications skills will also be considerd. In this job they are very impotant because you will be dealing with the customers all the time
As well you will need a reference to prove you are honest & reliable because you will be handling money & having to give change.
It would also help if you are aware of occupational health & safety issues as well as anti discrimination laws.
If you are really keen why don't you look for a college course in hospitality near you. This would not only give you the knowledge and some pracitce but often these courses help you find a job at the end.

Blow them away in the interview with personality. If its a small bar with mostly old people for the clientèle, you just need to know how to read bottles of alcohol and pour it into glasses. If you are catering to a younger crowd, you have to look good, dress in style, know all kinds of drink recipes, and have a great and outgoing personality.
Also, have a clean background (no criminal charges, etc)

learn how to make cocktails, and fun popular shots, always be atleast 30 mins early for work, look your best, smile heaps, remember the regulars drinks and names, always look like your having fun, never whinge or *****, willingness to learn,
make sure you have your Responsible Service of Alcohol (RSA)
look confident!!
