Lateral movement is hard to handle, but if the bounce is erratic then bounce can be really tough as you become unsure about playing back or forward. So I will say erratic bounce rather than extra bounce is more difficult to handle.

South Africa, green pitches good for seam bowling. Bounce and movement is usually the key however usually it's the movement of the seam. Akram and Younis exposed this a lot during their bowling. Bounce can also be effective like Ambrose for the West Indies.
