Let's see. Well, I really think it depends. To me, you should end your essay about how you finally got through the situation and overcame whatever difficulty it was. In that case the broken leg would be easier to write about than the stage fright, simply because you've been through it, you're finished with it, and you can look back on it. Unless you've completely overcome your stage fright by now, it wouldn't be as strong a topic as having a broken leg.
And as for the whole outline, just learn to ask yourself: what would the teacher want to read? Although I don't know exactly what he or she said, I think it's fairly easy to brainstorm on that topic.
Like here are some suggestions: How has this experience affected me, and how has it made me stronger (or weaker, if you want)? What parts of my life did it take away from me? What did I learn that I can now use in the future? Now that I've been through it, what advise can I give to anyone who'll have this same situation?
Give specific descriptions about what happened to you. How did you break your leg, or when was a time when you had to give a big speech in front of two hundred people? Include that in your outline. Also, maybe talk about how it made you feel. Were you about to have a nervous breakdown because you had to give an oral report in front of the whole class? Did your leg break just before the dance? How did you get through the whole ordeal? Or whatever, but you see what I mean?
Although I've never broken my leg before, I've definitely had to write an outline before. Hope this helps

I would recommend the broken leg, because you can find a process and the steps in that process are easier to label. Stage Fright is a little too subjective.
Check out this article to start: http://en.wikipedia.org/wiki/Broken_bone
1. Leg break
1a-c. the 3 types of leg fracture; greenstick, simple, and compound (more are listed in the article)
2a-c. the complications of each type
3. the classification of each break
4. The bodies response, first the blood cells, then the autoimmune response, then the skin reaction and then the bone knitting. You need to go into depth on each of these because that should be the heart of your paper.
5. Treatments; bone setting, treat for shock, cleaning out the wound, splinting the bone and why, repairing the skin, repairing the blood vessels, blood transfusion (if needed), the cast, heal time required etc. You can go into detail about each step and discuss the insertion of plates and screws.
6. Complications; Osteoporosis, increased chance of bone disease like arthritis or an infection setting in the bone marrow that could cause a blood infection. The atrophy of muscle tissue, the impossible nature to splint a hip fracture, which requires transplants, bone, grafts and so on. Bone cancer can be caused by the increase in bone growth; brittle Bone disorder and so on.
7. Complex situations, like a spinal cord injury that can cause chronic pain or paralysis. How a bleeding in the brain can kill since the skull holds in all that pressure.
If you need more discussion then you can go into how a broken bone affects animals; most horses are shot because they can’t heal broken legs properly. In the wild no one can set a bone so often the break heals improperly and the animal is handicapped.
To make the project complex or difficult you are going to have to give an example of a situation where a person gets a bone fracture and then a complication develops. If you research those complications then you can follow the doctors as they try to find out what the complication is, eliminate possibilities, and come to a diagnose. Then you can cover what methods are taken to heal the bone. Of course the complications can be suspected and all eliminated, that is standard procedure. Some tests can show a false positive and so on, or the doctors could just be exploring the alternatives.

Stage fright would be a great topic since you have to write about trying to DO something difficult. Good luck!
It might be challenging to describe and present the anxiety and feelings associated with stage fright. I would try to focus on 3 or 4 main points. Each point begining with a topic sentence.

difficult?
try going through the days where your wife is about to give birth any minute.
or if you're the pregnant mother, giving birth.
breaking my right arm and leg in a car crash and being awake to feel the pain.
a best friend dies/dying
a relative becoming bankrupt
falling off stage when you're doing the climax scene
geting slapped and having everyone go "ohhhhh"
there are many difficult things to write about.

Of the two, it depends on whether your teacher likes emotional versus physical pain. Depending on who YOU are as a person, choose between emotion vs. physical etc.
You could think of something stronger like the plotline of a good book. Teachers love writing about books. . .usually.
Experiences u could write about: relationship with parents (notice I didn't say bf. . .u will understand why); Something facing society today like Global Warming, etc.

Why not write about how hard it is to write an outline for a paper! That is a neat idea and it is soooo true.
