I have alot potatos left over with sprouts growing on them.

You can not buy seeds for potatoes. Most people don't know this. You plant your old potatoes with the eyes (roots) on them, and the roots will produce a new plant.

I grew up where my parents every year would plant the potatoes that have sprouted, and the crop was great. If there are 5 sprouts on one potato, cut the potato into the 5 sections, and plant them for 5 new plants

Sure you can, but you may not get the crop you did with the original seed potatoes.

As long as they're not a hybrid type. You can use them as long as they're not rotten and still have "eyes" on them.
