I'm not sure they're the most spread out, but they have long had a huge population and during the heyday of the British Empire, the Brits used to ship them all over the empire to do certain work, like building railroads, because they were industrious and rather compliant to authority. Virtually everywhere the British Empire existed you'll find a Chinese community that was established during that time. The US government also recruited them to help build the railroad west to California.

The reason you have "Chinatowns" is that the Chinese tended to remain segregated within the host countries where they lived, separated mainly by language and also by a strong culture and traditions. Plus, as in the US, there was often intense racism against them (remember the Anti-Chinese Leagues that existed in many parts of the old west). Living together and retaining strong, insular communities provided protection against bias and provided them with an economic base.

Because they've got the Genghis Khan gene. Some study came out recently that some amazingly high percentage of the Chinese population is a direct descendant of Genghis. Combine this genetic superiority with the evolutionary pressures that have been placed on the Chinese due to population, weather, war, politics, economics, etc, and you have a master race with gazillions of the most ambitious (albeit unprivilledged) ones leaving their homeland for opportunities in foreign lands.

I haven't been everywhere in the world so I can not attest to that, but may have something to to do with the fact that there are so many of them.

You know Black people are pretty spread out to my friend.
