The species is the domestic fowl. The male is a cockerel or a rooster; the female is a hen; the young are chickens; older female chickens before laying are pullets.

The meat of the domestic fowl is called "chicken". By extension the birds that are grown for meat are called chickens and this applies to males and females. From this, "chicken" has come to replace "domestic fowl" in some areas as a general term for the lot.

In Australia, we call them all "chooks".
