North is usually determined by the magnetic north pole as it was done by the Egyptians. (or so they think) The pyramids of Giza are aligned to the compass cardinal points to a very high accuracy, each side facing N, S, E, and W to within a few tenths of a degree. However when the pyramids were constructed around 3000BC they had a different north star which was Thuban in Draco.

The Great Pyramid of Khufu is accurately aligned but the subsequent pyramids are less and less so.

Geographic, or true north. However, in Egypt, the two are nearly coincident.
