In my experience hardcore is a genre of music. So a hardcore person is someone that listens to that music or preforms that music. Many of them have the ideals of being accepting of everyone. A large number of them also take on the Straight Edge lifestyle(abstaining from sex, drugs, and alcohol).

It could also be someone who focuses on something to the exclusion of everything else. A "hardcore" gamer; a "hardcore" poker player, etc.

Someone who is rough and tough, someone that knows the score and is wise about the harsher things in life. Not a wimp or a geek or polished. That is my definition anyhow.

A person with a strong personality, can speaks his/her mind, tough, hard working, never give up and don't take NO for an answer.
