Condensation is the changing of matter from a gas (or vapor) into a liquid. Evaporation is the opposite process: liquid changes into a gas. Sublimation is the changing of a solid directly into a gas, bypassing the liquid state.

Three states of matter:

Solid, Liquid, Gas.

Condensation is Gas->Liquid
Evaporation is Liquid->Gas
Sublimation is Solid<->Gas, either direction. (Frozen Carbon Dioxide, dry ice, goes from a solid directly to a gas at room temperature)
