what would probably be a person's salary in the mid 1800s if they worked at a diner?

Assume 3% inflation per year from 1800 to 2007. Modern diner workers get $3-$4 per hour, not including tips. So...based on that logic, you'd have to pay a restaurant to work at a diner.
