ok, so i'm taking the stolons and planting them in peat pots. This should work right?

Theoretically yes. I'm guessing that you must have read about this somewhere.
Why don't ya just go ahead and plant them in the yard? I'm betting at Spring they'll start to take off.
And of course, you really must be trying to save some money. I can get St. Augustine flats for $.88. Cutting these up and planting the squares still sounds like a lot less work than planting stolons.

If you are going to plant them in your own yard, just plant them so that roots at the segments are in the ground. But if you live where it may freeze, what you are doing makes sense.

It should work. But it might be easier just to buy sod and cut it into 2"x2" squares.
