I have to agree with Puddin' - Gilmour and Waters were brilliant. "Comfortably Numb" by Floyd as well. Syd was not quite that famous, though. I love "You're So Vain" as well but cannot be absolutely sure it is about anyone famous. Only Dick Ebersol and Carly know (well, perhaps a couple of others, but I don't know them). I never knew people thought it was about Cat Stevens! I mean, how could the man who wrote the soundtrack to my favorite movie (Harold & Maude) be vain?? Then again...
"Vincent" by Don McLean. It is a work of art.
After posting, I saw Rocklyn's answer. That too! Quite possibly the best ever.
