Ive been using my DVD Recorder and some discs will edit but some won't. Has it got something to do with the plus sign on some discs and the minus sign on the other

yes they are different formats. minus one are better to edit

Read the instruction book that came with your DVD recorder. It will tell you what format discs you can write and edit, or it will probably also be written on the box.

DVD+ and DVD- are different formats and most machines only write properly to one or the other.

A "finalised" disc of either format should play on any modern DVD player.

There are 3 types of Discs

DVD-RAM
DVD-R (-RW)
DVR+R (+RW)

Look into the Logos in your DVD drive and you will see which ones are supported by your drive

For some recorders, speed (2x, 8x, etc.) is important as well. So check your manual for the recommended discs.
