..........are trying to screw each other out of as much as they can. This is my default perspective; I know that it is not that as often as it is. Are there any books that can help me to understand business in a more realistic, positive way?

I'm a business owner. I see business negotiations generally working in the opposite of what you're saying. Two parties sit down and figure out how each of their business can best serve the other, and thus be served by the other. If there is no mutual benefit a wise business person on either side will walk away.

Also, there is an old saying about shearing a sheep or butchering it. You can have wool for a lifetime or a single fine dinner. Business is much the same...and screwing your business partners is like butchering the sheep. You may dine once...but there will be no wool next week.
