I want a houseplant that is easy to grow, grows fast, and can toloerate me missing a day or two watering it. It won't get any direct sunlight and mustn't be harmful to cats/dogs. Thanks.

Cast iron plant. Also knowns as Snake Plant and the proper name is Aspidistra Elatior. Meets all your needs! Plus one of the more effective air cleaning plants you can have in your house. The common names do not suggest it, but is is actually quite an attractive plant.

A peace lily (Spathyphyllum) is a great choice. They're available in lots of different sized pots, from 4" up to 12" at most garden stores. There are many different varieties of them. They like low light levels, lots of water (they will completely collapse when they need water but will bounce right back after watering) and they have very pretty white flowers.
Another choice might be a Draecena Marginata (Dragon Tree) they are available in lots of sizes. They like low to medium light levels. Watering in the winter is every 10-14 days, in the summer every 7-10 days.Home Depot or Loewes often have a good selection of tropical plants, check with a garden center staff person on more ideas for tropical plants. Maybe an herb garden, although I don't know how high maintenance they are and their lighting needs.

Herbs are of course, edible, making them safe for animals, kids, and functional for you in addition to being pretty.

You may also enjoy aloe, or lavender, or anything else that is functional (aloe is medicinal, lavender is aromatherapeutic) and pretty.

I know nothing about raising plants though, so check your facts on what they need to thrive.

One thing, the holiday season is over, but poinsettias are poisonous to pets and children. Get them out, or out of reach, ASAP.

You might consider a bed of catnip, may have mixed results. The cat my go to town on it and not know the limits of this being her only plant to mess with.

I think what you want is a nice silk plant.

Today's silk plants are very nice looking and require almost no care.
