After the rain stopped, Noah released several birds to see if the water had abated enough to leave the ark. The first attempts with a raven failed. Finally Noah released a dove who eventually returned with an olive branch in its beak. This meant that the water had gone down enough for small plants to begin growning again.
God later placed a rainbow in the sky to seal his promise that he would never use a flood to destroy the world again. When we see a rainbow we know that the rain is coming to an end and are reminded of God's promise.
You can find the whole story in the first part of Genesis.

Tell her to open her Bible at Genesis Chapter 6 and read through to Chapter 9. This tells the story of Noah and the Great Flood.
Look at Chapter 8 verse 11 and Chapter 9 verse 13
Noah sent the dove out to look for dry land. She returned with an olive branch in her beak to indicate the flood had subsided. The rainbow is a sign from God that he will never again destroy the earth with a flood.

When the rain stopped, Noah 1st sent out a raven, which never returned. Then he sent out the dove. The 1st time it came back with nothing. Then he sent it out again. This time it returned with an olive branch in it's mouth. That told Noah that there was land somewhere and the flood waters were receding. The rainbow was a sign of God's promise to Noah that He would never destroy the world with water again.

I'm sorry you're getting such rude responses. Obviously, the dove, olive branch and rainbow appear in the story of Noah's Ark and reading the bible gives a straight-forward interpretation. However, they also appear in many other mythologies across cultures and around the world, often symbolizing different things.
If you (or your grand-daughter) are interested in the way these symbols function within the bible and in the wider scope of history, I've attached links to sites relevant to your question below. Of course, non of these is complete, but they do offer a good starting point. Good luck.

Noah set a dove free to see if there was land near. When it returned with an olive branch, Noah knew that there was land above the waters. The rainbow signified to Noah that the flood was over, and there would be peace.

"There are two possibilities. Since the olive is quite a hardy tree, it might have remained alive under water for some months during the Deluge. With the abating of the floodwaters, an olive tree that had been submerged would again be on dry ground and could put forth leaves. The olive leaf carried to Noah by the dove could also have been taken from a fairly young sprout that came up after the floodwaters had abated."*

I believe that is how Noah knew the flood was over. Because the dove came back with an olive branch from a tree that has to be above water. :-)
