As a fan of the Yucatan, but not Cancun, I would suggest you consider Cancun's classier neighbour, Playa Del Carmen. You'll find the bars are more chic, the shopping less touristy and the overall vibe more relaxed and cosmopolitan, less spring break and work junkets.
You'll have the same beautiful beach, just without the mass of white and red bodies. It's also more likely that you'll get a feel for Mexico rather than the sun of Mexico and what seems like a town of hotel employees and their guests.
There are all-inclusive resorts in Playa, all of the more boutique variety. There are also a couple of day-spas within walking distance of the beach, the bars and the hotels. You are also just across from the island of Cozumel, without the need for the overpriced day trips offered by Cancun's hotel trade.
After many trips to both areas, I would definitely recommend Playa for a chic, authentic trip - it's always more romantic taking an evening walk without being followed by bell-boys wanting tips. You can take a bus, a collectivo (a mini-van) or a taxi from Cancun airport to Playa - it takes about 15-20 minutes more than the journey into Cancun's hotel district.

If you're set on Cancun I recommend Riu Palace Las Americas. It is a top notch AI resort and is excellently located within walking distance to many of the most popular clubs along with shopping and restaurants. You can check out the reviews on trip advisor as the other poster suggested. However, I am also a bigger fan of Play del Carmen as it is way, way less commercialized and much more authentic. Most of the resorts have their own night clubs but you can still taxi to town and visit more popular clubs.
Have fun and Happy Anniversary! We just celebrated our 25th in Puerto Vallarta a few months ago and that is also a very, very nice Mexico destination. We've been back there 4 times since PDC and Cancun. I think those days are over for us and we will most likely continue to go back to PV

If you're interested in venturing south a bit to the RIviera Maya, I recommend Secrets. There are no kids allowed, and that makes a big difference in terms of atmosphere. The nearby Playa del Carmen is a nice place for evening trips (with a shopping district known as Fifth Avenue) and the surrounding area is where many of your of-resort adventures would be located anyway. So you'll spend less time traveling on days you leave the resort.

well i went to cancun over the summer and loved it the beaches where great the only bad thing was the airport and that's because the airport is pretty dirty lol... but if i were you i would try to get sum where close to the club's like cocca bongo because thats pretty much the hot spot for all the clubs and you really dont want to be riding the city bus at 4 in the morning lol bad expernice doing that

I've stayed at the Moon Palace Resort. Very nice, all inclusive. Many, great restaurants, nice pools, nice beach. Hot tubs in most rooms, and hammocks on the balcony. Golf course on the grounds, and horseback riding.
Can't give you any information about price as I was there on a work thing, so I didn't pay.
