If you have a common name (Bob Smith, Harry Brown, Jane Lee for example) the middle initial will help eliminate some of the confusion that may result in filing.
You will be more able to identify your documents because it would be Bob Randolf Smith for example.
Also, when someone else with your name runs up massive debts or goes on a crime spree, your extra identifier might come in handy.

Generally it's not too important. Your signature has to evidence an intent to be bound to whatever you're signing.

I've noticed some people like to sign their full names (middle initials and all) when signing important letters etc. to make it look more "professional." But I don't think it adds anything to the question of a person's intent when they sign.

Adding your middle initial isn't going to help you if someone tries to steal your identity. Conversely, you're not going to be able to get out of something you signed just because you didn't add a middle initial.
