Why are ducks depicted as yellow? Is there such a thing as a yellow duck?

The baby ducks are covered in a yellow down. Baby ducks used to be considered "pets" aka a goldfish. In the 1950s they were kept until they died or started growing in feathers and than were "set free". I suspect most died or were eaten soon after. Anyway, the yellow ducks you see (especially in the bath) are representative of the real "toys". Baby chickens (chics) were also used this way around Easter, even to the point of coloring them in Easter pastels. Many of our icons seem to come from 1950s Americana, I can only assume it's because the baby boomers have such a large population.

Duck are usually white or brown, plus other colors. Baby ducks are often covered with yellow down.

Where are you seeing pictures of yellow ducks? Maybe they are drawn yellow because white would be too boring, and brown would be hard to separate from the background?

Ducklings of white ducks are yellow. Many domestic ducks are white so the yellow duckling is a common sight.
