I'd like to obtain the ideal slump & mix in order to get the best workability and strength when it sets. The ones we poured earlier tuned out brittle, so I want to make sure we get the right mixture & slump for the next pour. (Only well informed anwers please)

You will need to use a water reducting agent to minimize your water usage. The proper slump is 4" to 6" before you use the water reducting agent. Your concrete was brittle, because it froze not because you did not have the correct slump. The concrete will have to be covered and heated for a minimum of 3 days for the concrete to hydrate properly.
