I'm just wondering if you have planning permission from your local authority? If it's not large enough to require building permission, you still require "building regulations" Have you any architect's drawings for this project? If you have, then all the information you require will be on them, I take it you are in the UK?

The footings should be at least 39 inches 42 `would be better. This puts the footing below the freeze line. Check with you city or town as they require it to be a certain depth

It depends on your area building codes. You want to make sure its below the frost line to avoid heaving. In lower new england its about 4ft while areas further south can get away with slightly less depth. To find out for your specific area contact the town hall and ask the people who do the permits they will be able to help you and you would mostlikely have to get a permit in your area anyway. You may have to ask about the depth dig the hole and have the hole inspected before you pour the cement depending on your local laws.

you can put a porch on round concrete pads with pea stone under them and it doesn't harm a thing. i live in Maine and this is how my porch is made and it doesn't shift in the winter or because of frost. most home improvement places sell them

Call your inspection office. Here in the midwest frostline is close to 30". We dug our holes 3 ft.
