Have a Spring Carnival. There are a couple of good websites, just google Carnival Games. You can put out posters and make it a whole community event. We have done neighborhood carnival, and got volunteers like the Boy Scouts to help with set up and clean up and given the PTA keep the proceeds from a hot dog stand. The most profitable carnival we have ever had included a Silent Auction. We got donation from everything to free Jiffy Lube Oil Changes to A Day at the SPA.
You could also sell booth space for local businesses to advertise their services, or home sales people like Mary Kay, Discovery Toys, Tupperware, Pampered Chef, or local artisans.
One of our local High Schools has a craft and art fair and they have gotten so big over the years you have to reserve space a year and 1/2 ahead of time.
All of these are fairly labor intensive, but if you have a large pool of volunteers, it can be a good way to raise money from the whole community not just the parishioners.

Krispie Kreme donut has a good fundraiser program that our church did and made a lot of money you can check it out on their web site. Also another good fundraiser is community dinners such as chili or soups. Car washes are also very good and the overhead is very low but I'm not sure about the weather were you live at right now, that may be a good one for the spring.
