John Wayne's favorite film that he made was, "The Searchers" so that's my first choice, along with The Shootist, The Cowboys - with Wayne, and Unforgiven, Silverado, and High Noon -- oh and even though it wasn't shot in the West, Quigley Down Under.

The Searchers. Unbelieveably intense. For action, The Magnificent Seven.

Take your pick between:
"The Searchers"
"The Good, the Bad, and the Ugly"
"Unforgiven"
since I cannot choose between those three.
Also, check out the best "eastern" westerns ever made, "Yojimbo" (remade as "A Fistful of Dollars") and "Seven Samurai (remade as "The Magnificent Seven").

In my opinion, High Noon is the best film ever of any genre. I also like The Professionals and Vera Cruz. Of the more modern films, I favor Silverado.

Most critics say "The Man Who Shot Liberty Valance". My personal favorite is "The Good the Bad and the Ugly" followed closely by "True Grit".
Your mileage may vary.

My favorite movie of all time is the Outlaw Josey Wales. Clint Eastwood seems to be common to most of the answers so far.
