If you are moving to Europe then no it shouldn't change much. If you are staying here, it will change very dramatically, it will go very high as the power supply burns up, and then drop to zero once it is broken beyond repair. In other words, only change it to 208v if you are going to a place that has 208v power. And actually it should be 225v, but same difference. I am of course assuming you are already in America, if you are in Europe, it should already be set to the higher voltage.

If the server is a heating device the power will double for a resistive load. The device may not be designed to deliver this much power and it could fail or be a fire hazard.
