Immanuel Kant (The Critique of Judgment) is one of the most important to consider.
David Hume (Of the Standard of Taste)
Plato (see link below for list of stuff related to Plato and asthetics)
You should also pay attention to Martin Heidegger and others in the traditions of phenomenology and hermeneutics. For more modern, post-modern and non-western aesthetics, the Wikipedia entry gives more information

The only name I can really think of is Socrates, and only because he argued that beauty is, at least in part, a function of health. Aristotle wrote some books on the arts though, and so probably made a contribution; however my only knowledge of these is through the writings of others. Maybe check out the hedonists, too.
