"The Old West" in the U.S. was, in general, from the California Gold Rush of 1848-50 through the start of the First World War. The height of The Old West is the 25 years following the Civil War, so 1865-90.
You will get differing answers on your question because different territories experienced The Old West in different decades. Cowboys, gold miners, dancehall girls and loose morals are images from The Old West glorified by various movies and TV series. However, the players moved on as one area became more civilized. The last areas to experience The Old West were New Mexico and Colorado on up to Montana and the Canadian Boarder.

Generally the old west refers to the period from 1860s-1890s. The period ended with the closing of the frontier.
However, the archetype characters of the old west lingered on into the next decades.

Flowerpet is pretty much right. The "Old West" was only like 20-25 years in history. But it was such an interesting time that hundreds of thousands of books and movies have been made about it. That makes it seem like it was forever but it was actually only from like 1865-1890 (give or take) depending on your definition of the period.
