Plus when I have it connected to iTunes and try to drag music onto the iPod icon like it says to do, it will only transfer this one song. Could that be because they we're downloaded illegally?

To change the name, just click twice on the name in the left sidebar and type in what you want it to be called. To delete Notes, go to My Computer and open the folder under Devices with Removable Media that has the same name as the iPod, then open the Notes folder, and delete all of the .TXT files you find there. If you're trying to sync music from the iPod to the iTunes program, it will only let you reverse-sync music that was downloaded from the iTunes store (buying it elsewhere, ripping it from CD, or any other method will result in it only being able to one-way-sync to the iPod because they have no way of identifying whether it was legally or illegally obtained unless it was purchased through iTunes). If you're trying to sync music from iTunes to the iPod, do it by creating one or more playlists. Click and drag songs into the playlist, not the iPod. Once you've got that done, sync the iPod to get the iPod page displayed. Click the Music tab, and select which playlists you want to have loaded, or just select for it to load all music and playlists. Once you've done that, click Apply in the bottom right corner to resync the content to your iPod and wait for it to tell you that it's done.

Click the restore button in iTunes when the iPod is hooked up, it will reset the iPod back to factory settings. It will also erase britney's music.
