I don't know any unknown countries. I guess that's why they're unknown.

Perhaps you mean little-known countries? All the countries are listed in Google and they all have post offices. All are KNOWN for goodness' sake. this is the 21st century.
Now there are people groups in Papua New Guinea and in the Amazon who are, as yet, uncontacted. Missionary organisations know about them and sometimes some are 'found'; (Peru had just such an event in the 80s.)
Little known ones are of interest to stamp collectors !! How about Djibouti? (sp)

do you mean "countries you don't know"? well, why don't you take a look at UN website http://www.un.org/members/
and check out which of its member states (or non member states) you don't know.
